Ok, time to weigh in with some facts & figures, I am using quoted figures from Guzzi themselves, so there would be a few minor differences from bike to bike, with tuning ,accessories fitted, etc.
Both set of figures are for the current 2008 model 1100 & 750 Brevas:

So about 0.1hp/Kg or about 1/3 less power to weight, but the 750 is nearly 50kg lighter.
Would you notice it on the road ?
Unless 2 lovely people were prepared to lend me their 1100 & 750 Breva's for a test thrash (oops, careful side by side comparo), except for outright top speed (and none of us would know exactly how fast our bikes will go as you would have to break the law to find out, we wouldn't ever think of doing that, would we?), I imagine with the smaller size & bigger brakes the 750 would feel more nimble & a little quicker in most situations.
Would I buy a 750 in preference to the 1100, if I was in the market?
Sorry guys, probably not. I am a horsepower whore, though I would testride the 750, as you can always get some bolt-on go-fast bits down the track & build the 750 into an 1100 eater, so the smaller more nimble 750 maybe a better option.
Enough of the fence-sitting, I'm getting splinters in my bottom.
